Description
Cardoon, as it is more commonly known, is a close relative of the artichoke, but it’s the new shoots that are the delicacy. not the flower buds. Beautiful bold gray thistle-like foliage adds texture to the garden and in late summer, periwinkle blue flowers burst from spiny buds. This seed strain has wintered over well in sharply drained soil in our zone 6 garden.
